Healthy Carrot Muffins (Dessert)
Spiced carrot muffins made with gluten-free flour, ground almonds, and coconut milk.

01Finely grate the carrots and set aside; line a muffin tin with 9 paper liners and preheat the oven to 360 degrees F (180 degrees C). 2. Combine all dry ingredients in a large bowl and whisk. 3. Pour in the coconut milk, lemon juice, and vanilla and mix with a spatula. 4. Fold in the grated carrots until dispersed. 5. Divide the batter between the muffin cups and bake 23-25 minutes until a toothpick comes out clean. 6. Cool at least 20 minutes before removing from the pan, then optionally frost.
