Oven baked blueberry pancakes (Breakfast)
Sheet-pan blueberry pancake bars made with rice flour, coconut, and flax eggs.

01Make the flax eggs by mixing the ground flax seeds with water; set aside 5-10 minutes. 2. Combine the coconut milk, maple syrup, and lime juice in a small bowl. 3. Grind the shredded coconut briefly, then whisk all dry ingredients in a bowl. 4. Add the flax eggs and coconut milk mixture and whisk until combined, then stir in the blueberries. 5. Pour into a lined 8x11-inch sheet pan, top with more blueberries, and bake at 375 degrees F (190 degrees C) for 20-25 minutes. 6. Cool about 5 minutes, remove from the pan, and cut into bars.
