Raspberry Oatmeal Bars (Breakfast or Snack)
Oat crumble bars layered with raspberry chia filling and vegan custard.

01Preheat the oven to 360 degrees F (180 degrees C) and line a 7x11 or 8x8 pan with parchment paper. 2. Mix all dough ingredients and press two-thirds of the dough evenly into the pan. 3. Stir all raspberry layer ingredients in a saucepan off heat, then bring to a simmer and cook over low heat 3 minutes, stirring frequently; pour over the crust. 4. Whisk all custard ingredients in a saucepan without heat until lump-free, bring to a boil while stirring, and simmer 30-60 seconds. 5. Pour the custard over the raspberry layer and spread carefully, then crumble the remaining dough on top. 6. Bake 20-25 minutes, cool at room temperature, and chill in the fridge before slicing.
