Eggplant Tomato Chutney

Heat 1 tbsp oil in a pan and add cumin seeds (and coriander seeds if using).

Ingredients (for 1 servings)

  • 1 whole โ€” Chutney Base
  • 1 whole โ€” medium eggplant, cut into cubes • 2 medium tomatoes, chopped • 1/2 medium onion, chopped • 2–3 garlic cloves, minced • 1–2 green chilies, chopped (adjust to spice preference) • 1 tsp ginger, grated • 2 tbsp oil • 1/2 tsp salt, or to taste • 1/4 tsp turmeric powder
  • 1 whole โ€” Spices
  • 1 tsp โ€” cumin seeds • 1 tsp coriander seeds • 1/2 tsp chili powder (optional, for extra heat)
  • 1 whole โ€” Optional Tempering
  • 1 tsp โ€” mustard seeds • 6–8 curry leaves • 1 dried red chili • 1 tsp oil
