Heat olive oil in a large pot over medium heat.

Ingredients (for 4 servings)

  • 1 cup โ€” wild rice, rinsed • 3 cups vegetable broth or water • 1 tbsp olive oil • 1 small yellow onion, finely chopped • 2 celery stalks, diced • 3 garlic cloves, minced • 1 tsp fresh thyme • 1/2 tsp salt • 1/4 tsp black pepper
  • 1 whole โ€” Mushrooms
  • 12 oz โ€” mushrooms (cremini, button, or mixed), sliced • 1 tbsp olive oil • 1/4 tsp salt • 1/4 tsp black pepper
  • 1 whole โ€” Finish
  • ¼ cup โ€” chopped parsley • 1/4 cup sliced green onions • 1/4 cup toasted almonds or pecans • 1 tbsp lemon juice (optional, for brightness)
