  • 1 tbsp โ€” olive oil • 1 large onion, chopped • 1 tbsp fresh ginger, grated • 2 medium tomatoes, chopped • 1 cup dry red lentils, rinsed • 1 1/2 vegetable bouillon cubes, crumbled • 1 roasted red pepper (jarred or homemade), chopped • 2 tsp curry powder • 3 cups water (plus more as needed) • 2 cups baby spinach • 1/2 lemon, juiced • Salt and black pepper, to taste
