  • 1 whole โ€” head garlic • 1 tsp olive oil
  • 1 whole โ€” Salad
  • ¾ cup โ€” quinoa, rinsed • 1 1/2 cups water • 1 red bell pepper, chopped • 1 yellow bell pepper, chopped • 1 medium tomato, chopped • 1 stalk green onion, thinly sliced • 1/3 cucumber, diced • 1/4 cup dried cranberries, chopped • 1/4 cup kalamata olives, chopped • 1 cup cooked chickpeas • 1/3 cup roasted almonds, chopped

  • 1 whole โ€” Juice of 2 lemons • 2 tbsp extra-virgin olive oil • 1 tbsp tahini • 1 tsp reduced-sodium soy sauce • 1 tsp balsamic vinegar • 1 tsp onion powder • Pinch salt • Pinch of black pepper
