Cook quinoa according to package instructions and let cool slightly.

Ingredients (for 4 servings)

  • ¾ cup โ€” quinoa , rinsed • 1 cup frozen shelled edamame • 2 1/2 cups cooked brown lentils • 1 red bell pepper, chopped • 3 cups spinach • 2 tbsp roasted pumpkin seeds
  • 1 whole โ€” Dressing
  • ¼ cup โ€” tahini • 1/4 cup water • 2 tbsp reduced-sodium soy sauce • 1/2 tbsp maple syrup (plus more to taste) • 2 tsp apple cider vinegar • 1 tsp white miso paste • 1 tsp onion powder • 1 tsp sambal oelek
