One-Pot Lasagna Soup

Ingredients (for 4 servings)

  • 1 tbsp โ€” olive oil • 1 medium onion, diced • 3 garlic cloves, minced • 2 tbsp tomato paste • 2 vegetable bouillon cubes • 1 tsp Italian seasoning • 1 tsp dried oregano • 1/2 tsp dried thyme • 1/2 tsp onion powder • 1/4 tsp black pepper • 1 3/4 cups plant-based ground (or lentils as an alternative) • 1 cup mushrooms, finely chopped • 3 1/3 cups canned diced tomatoes • 3 cups water or vegetable broth • 2 tsp balsamic vinegar • 3 to 4 lasagna sheets, broken into bite-size pieces • 2 cups spinach
