  • ⅓ cup โ€” kimchi, finely chopped • 2 tbsp kimchi brine • 2 tbsp rice vinegar • 1 tbsp soy sauce or tamari • 1 tbsp sesame oil • 1 tsp maple syrup • 1 tsp grated ginger • 1 garlic clove, minced • 2 tbsp water, as needed to thin
