Harissa Roasted Cauliflower & Turmeric Rice

Preheat oven to 425°F (220°C).

Ingredients (for 4 servings)

  • 1 whole โ€” Harissa Cauliflower
  • 1 whole โ€” large cauliflower, cut into florets • 2–3 tbsp olive oil • 2–3 tbsp harissa paste • 1 tsp ground cumin • 1 tsp smoked paprika • 1/2 tsp salt • 1/2 tsp black pepper • 2 tbsp water (to loosen sauce, if needed)
  • 1 whole โ€” Turmeric Rice
  • 1 cup โ€” basmati rice (uncooked) • 2 cups vegetable broth or water • 1 tbsp olive oil • 1/2 onion, finely chopped • 2 cloves garlic, minced • 1 tsp ground turmeric • 1/2 tsp cumin seeds (or ground cumin) • 1/2 cup peas • Salt, to taste • Fresh cilantro, for garnish
