Grilled Bell Pepper Salad

Preheat grill or grill pan to medium-high heat.

Ingredients (for 4 servings)

  • 1 whole โ€” Grilled peppers
  • whole โ€” bell peppers (mixed colors), halved and seeded • 2 tbsp olive oil • 1/2 tsp salt • 1/4 tsp black pepper
  • 1 whole โ€” Salad Base
  • 2 cups โ€” arugula or mixed greens • 1/2 red onion, thinly sliced • 1/3 cup olives • 1/4 cup fresh parsley, chopped • 1/3 cup feta or vegan feta • 1/4 cup toasted pine nuts or almonds
  • 1 whole โ€” Dressing
  • 3 tbsp โ€” olive oil • 1 tbsp red wine vinegar or balsamic vinegar • 1 tbsp lemon juice • 1 tsp Dijon mustard • 1 garlic clove, minced • 1/2 tsp dried oregano • Salt and black pepper, to taste
