Heat oil in a large pan or wok over medium-high heat.

Ingredients (for 4 servings)

  • 1 whole โ€” Rice
  • 3 cups โ€” cooked jasmine rice (preferably day-old, chilled) • 1–2 tbsp neutral oil
  • 1 whole โ€” Vegetables & Aromatics
  • ½ whole โ€” onion, diced • 2 cloves garlic, minced • 1/2 cup carrots, diced • 1/2 cup peas (fresh or frozen) • 1/2 bell pepper, diced • 2–3 green onions, sliced
  • 1 whole โ€” Flavor Base
  • tbsp โ€” curry powder (or curry paste, to taste) • 2 tbsp soy sauce or tamari • 1 tsp turmeric (optional, for color and depth) • 1/2 tsp salt, or to taste • 1/4 tsp black pepper
  • 1 whole โ€” Optional Add-Ins • 1/4 cup cashews or peanuts • Lime wedges, for serving • Fresh cilantro, for garnish
