Crispy Noodles With Seitan Stir-Fry

Cook noodles according to package instructions, drain, and let cool slightly.

Ingredients (for 2 servings)

  • 1 whole โ€” Crispy Noodles
  • 7 oz โ€” egg noodles or wheat noodles • 1–2 tbsp oil, for pan-frying
  • 1 whole โ€” Seitan Stir-Fry
  • 1 tbsp โ€” vegetable oil • 8 oz seitan, thinly sliced • 2 garlic cloves, minced • 1 tsp fresh ginger, grated • 1 medium carrot, julienned • 1 bell pepper, sliced • 1 cup cabbage, thinly sliced • 2 green onions, sliced
  • 1 whole โ€” Sauce
  • 2 tbsp โ€” soy sauce or tamari • 1 tbsp hoisin sauce • 1 tbsp rice vinegar • 1 tbsp maple syrup or sugar • 1 tsp sesame oil • 1 tsp cornstarch mixed with 2 tbsp water (slurry) • 1/2 cup vegetable broth or water • 1 tsp chili sauce or sambal
