Creamy Broccoli Pesto

Bring a pot of water to a boil and blanch broccoli for 1–2 minutes until bright green and slightly tender.

Ingredients (for 4 servings)

  • 3 cups โ€” broccoli florets • 1/2 cup fresh basil leaves • 1/3 cup extra virgin olive oil • 1/4 cup walnuts or pine nuts • 2 garlic cloves • 2–3 tbsp lemon juice • 2–3 tbsp nutritional yeast (or Parmesan if not vegan) • 1/2 tsp salt, or to taste • 1/4 tsp black pepper • 2–4 tbsp water (as needed to blend)
