Ingredients (for 2 servings)

  • 1 whole โ€” Noodles
  • 6 oz โ€” soba noodles • 1 tsp neutral oil
  • 1 whole โ€” Vegetables and Toppings
  • 1 cup โ€” shiitake mushrooms, sliced • 1 cup shelled edamame (or other protein of choice) • 1 avocado, sliced • 1 small radish, thinly sliced • 2 green onions, sliced • 1 tbsp sesame seeds
  • 1 whole โ€” Citrus Ginger Dressing
  • ¼ cup โ€” rice vinegar • 2 tbsp lime juice • 1 tbsp soy sauce • 1 tbsp maple syrup • 1 tsp grated fresh ginger • 1 garlic clove, minced • 2 tsp toasted sesame oil • 2 to 3 tbsp water, to thin
