Chickpea Meatballs

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Ingredients (for 4 servings)

  • 1 whole โ€” Meatball Base
  • 2 cups โ€” cooked chickpeas, drained and rinsed • 1 cup cooked brown rice (or quinoa), cooled • 1 cup pecans or walnuts • 1/2 cup breadcrumbs (or oat flour) • 1/2 cup nutritional yeast • 2 tbsp olive oil • 2 tbsp tomato paste • 4 garlic cloves • 1/2 small onion, chopped
  • 1 whole โ€” Seasoning
  • 2 tsp โ€” dried basil • 1 tsp dried oregano • 1 tsp smoked paprika • 1 1/2 tsp salt, or to taste • Black pepper, to taste
  • 1 whole โ€” Binder (as needed)
  • tbsp โ€” water or aquafaba • 1/4 cup extra breadcrumbs (if mixture is too wet)
