Shred or finely chop the apple and all vegetables (beets, onion, carrot, bell pepper, celery, and cabbage) to create a uniform base.
Ingredients (for 4 servings)

โ apple, shredded or finely chopped • 3 medium beets, peeled and shredded • 1 medium onion, shredded or finely chopped • 1 medium carrot, shredded • 1 medium red bell pepper, shredded or finely chopped • 1 celery rib, finely chopped • 1 cup shredded red cabbage • 1 tbsp vegetable oil • 3 garlic cloves, minced • 4 cups vegetable broth • 2 tbsp tomato paste • 2 bay leaves • 2 tsp ground coriander • 1 tbsp pickle juice • 1 pinch salt, to taste • 1 pinch black pepper, to taste • 2 tbsp fresh dill, chopped (plus more for garnish)
