Borani Banjan (Eggplant Dish)

Preheat the oven to 425°F (220°C).

Ingredients (for 4 servings)

  • 4 whole โ€” small globe eggplants, peeled and sliced into 1 cm thick planks • 1 1/4 cups vegetable oil, for frying
  • 1 whole โ€” Tomato Sauce
  • 4 whole โ€” garlic cloves, crushed • 2 fresh green chilies, sliced lengthwise • 3 medium tomatoes, chopped • 2 tbsp tomato paste • 1/2 tsp turmeric • 1 tsp salt • 1 medium yellow onion, sliced into rounds • 2 medium tomatoes, sliced into rounds
  • 1 whole โ€” Garlic Yogurt Sauce
  • 1 cup โ€” plain yogurt or unsweetened plant-based yogurt • 2 garlic cloves, crushed • 1/2 tsp salt
  • 1 whole โ€” Garnish
  • 1 whole โ€” Dried mint • Paprika
