Heat the oil in a large saucepan over medium heat.

Ingredients (for 4 servings)

  • 2 tbsp โ€” olive oil
  • 4 whole โ€” garlic cloves, crushed
  • 1 whole โ€” onion, roughly chopped
  • 2 tsp โ€” ground cumin
  • 2 tsp โ€” ground coriander
  • 5 cups โ€” vegetable stock
  • 12 oz โ€” potatoes, peeled and finely chopped
  • 425 whole โ€” g/15 oz can of chickpeas, drained
  • 1 tbsp โ€” flour
  • ⅔ cup โ€” almond milk or coconut creamer
  • 2 tbsp โ€” light tahini (sesame seed paste)
  • 200 whole โ€” g/7 oz spinach, shredded
  • 1 pinch โ€” cayenne pepper
  • 1 whole โ€” Salt and pepper to taste
