One-Pot Spicy Jambalaya

Heat a large pot over medium heat with olive oil.

Ingredients (for 4 servings)

  • 2 tbsp โ€” olive oil
  • 1 whole โ€” large onion, diced
  • 4 cloves โ€” garlic, minced
  • 4 whole โ€” bell peppers, diced
  • 2 whole โ€” ribs of celery, diced
  • 1 can โ€” crushed tomatoes, no-salt added
  • 3 cups โ€” low-sodium vegetable broth
  • 2 cans โ€” red kidney beans, low-sodium, drained and rinsed
  • 1 cup โ€” long-grain rice
  • 2 tsp โ€” smoked paprika
  • 1 tsp โ€” dried oregano
  • 1 tsp โ€” dried thyme
  • ½ tsp โ€” salt
  • ½ tsp โ€” cayenne pepper
  • 1 whole โ€” Black pepper, to taste
