Chimichurri Cauliflower & Tofu
Preheat oven to 425°F.
Ingredients (for 3 servings)
- 1 whole โ head of cauliflower, cut into florets
- 1 whole โ block extra-firm tofu, pressed and cubed
- 1 tbsp โ olive oil, for roasting
- ¼ cup โ olive oil, for chimichurri
- 3 tbsp โ red wine vinegar
- 2 whole โ garlic cloves, minced
- ½ tsp โ dried oregano
- ¼ tsp โ salt
- ¼ tsp โ red chili flakes
- 1 whole โ Black pepper, to taste
