Chimichurri Cauliflower & Tofu

  • 1 whole โ€” head of cauliflower, cut into florets
  • 1 whole โ€” block extra-firm tofu, pressed and cubed
  • 1 tbsp โ€” olive oil, for roasting
  • ¼ cup โ€” olive oil, for chimichurri
  • 3 tbsp โ€” red wine vinegar
  • 2 whole โ€” garlic cloves, minced
  • ½ tsp โ€” dried oregano
  • ¼ tsp โ€” salt
  • ¼ tsp โ€” red chili flakes
  • 1 whole โ€” Black pepper, to taste
