Broccoli and “Cheddar” Soup

In a large pot over medium heat, heat the olive oil.

Ingredients (for 5 servings)

  • 2 tbsp โ€” olive oil
  • 1 whole โ€” large onion, diced
  • 3 cloves โ€” garlic, minced
  • 6 cups โ€” broccoli florets
  • 2 cups โ€” carrots, shredded
  • 4 cups โ€” vegetable broth, low sodium
  • 3 cups โ€” plant milk, unsweetened
  • 1 cup โ€” raw cashews, soaked and drained
  • 1 whole โ€” ½ cups vegan cheddar cheese, shredded
  • 2 tbsp โ€” nutritional yeast
  • 2 tbsp โ€” all-purpose flour
  • 1 tsp โ€” paprika
  • ½ tsp โ€” turmeric
  • 1 whole โ€” Salt and pepper, to taste
