Ingredients (for 3 servings)

  • 4 cups โ€” vegetable broth, low sodium
  • 2 cloves โ€” garlic, minced
  • 1 tsp โ€” smoked paprika
  • ¼ tsp โ€” salt
  • 1 tbsp โ€” olive oil
  • 1 can โ€” black beans, low-sodium, drained and rinsed
  • ½ cup โ€” corn kernels
  • ½ cup โ€” nutritional yeast
  • ¼ cup โ€” fresh cilantro, chopped
  • 1 whole โ€” Black pepper, to taste
  • ½ tbsp โ€” olive oil, for pan-searing
  • 1 whole โ€” avocado, sliced
  • 2 cups โ€” pico de gallo
