Chop the eggplant and onion into small pieces and cook in a little oil over medium heat about 10 minutes until tender; add the garlic for a minute.

  • ½ whole โ€” Onion
  • 2 clove โ€” Garlic
  • 1 cup โ€” Canned Coconut Milk
  • 1 tbsp โ€” Curry Powder
  • 1 tsp โ€” Onion Powder
  • ½ tsp โ€” Ground Cumin
  • ¼ tsp โ€” Turmeric
  • ¼ tsp โ€” Smoked Paprika
  • ¼ tsp โ€” Cayenne Pepper
  • 1 pinch โ€” Salt
  • 1 pinch โ€” Black Pepper
  • 1 cup โ€” Cooked Rice
  • 1 handful โ€” Spinach
