Zucchini Stir-Fry

Chop the onion and zucchini in half and slice into 1/4-inch half-moons; dice the bell pepper and mince or grate the garlic and ginger.

Ingredients (for 2 servings)

  • 1 whole โ€” bell pepper
  • 1 can โ€” chickpeas
  • 3 clove โ€” garlic cloves
  • 1 tbsp โ€” fresh ginger
  • ½ tsp โ€” garlic powder
  • ½ tsp โ€” onion powder
  • ¾ tsp โ€” smoked paprika
  • 1 pinch โ€” salt and black pepper
  • ½ cup โ€” water
  • 3 tbsp โ€” soy sauce or tamari
  • 2 tbsp โ€” rice vinegar or lemon juice
  • 2 tbsp โ€” maple syrup
  • 1 tbsp โ€” cornstarch or potato starch
  • 1 cup โ€” cooked rice
  • 1 tbsp โ€” sesame seeds
