Peel and finely chop the garlic and cut the carrots into thin matchsticks; heat the oil in a large heavy-based saucepan over medium heat.

Ingredients (for 2 servings)

  • 1 cup โ€” cherry tomatoes
  • 1 tbsp โ€” coconut oil
  • 1 whole โ€” fresh ginger root
  • 1 tsp โ€” curry powder
  • 1 tsp โ€” turmeric powder
  • 1 tsp โ€” ground cumin
  • 1 tsp โ€” paprika
  • 1 tsp โ€” coriander seeds
  • ⅛ tsp โ€” ground cinnamon
  • 2 tbsp โ€” tomato paste
  • 2 tsp โ€” soy sauce or tamari
  • 1 cup โ€” light coconut milk
  • ⅓ cup โ€” peanut butter
  • ¾ cup โ€” water
  • 4 sprig โ€” fresh cilantro
  • 1 pinch โ€” salt and pepper
  • 1 whole โ€” lime juice
